Pakora Thongba (Spicy Pakora Curry)

Ingredients to make Pakora Thongba (Spicy Pakora Curry)

  • 1 cup besan (to make a thick batter)
  • 1 medium sized onion (finely chopped)
  • 100 gm chopped Maroi Naakuppi /Chinese Chives (optional)
  • 1 tsp turmeric powder
  • 1/2 tbsp red chilli powder
  • 4-5 green chillies (finely chopped)
  • 1 tsp ginger paste
  • 2 bay leaves
  • 1 medium sized tomato (cut into small pieces)
  • 3-4 garlic cloves (finely chopped)
  • salt to taste
  • 1/2 tsp garam masala
  • 2 cups of water
  • Fresh coriander, to garnish

How to make Pakora Thongba (Spicy Pakora Curry)

  1. Make a thick batter by mixing water with besan, some chinese chives, some chopped onions, turmeric, red chilli powder, garam masala, salt to taste and keep it aside for 10-15 mins.
  2. In a deep pan, heat oil for deep frying.
  3. When the oil is hot, deep fry this batter by making round shaped like structures. Deep fry till they turn golden brown and keep it aside.
  4. Take another pan and fry the bay leaves and onions till they turn golden brown, then put in the remaining chinese chives, chopped garlic-ginger paste, tomatoes, green chillies, masalas and saute till it is cooked.
  5. When the oil starts leaving the paste, pour the water so that it can make a curry.
  6. Let it boil for some time, then put in the fried pakoras till it becomes soft from the inside as well.
  7. Remove from the flame and garnish it with coriander leaves.
  8. Serve it hot with rice.

My Tip:

You can used fried red chillies for garnishing instead of coriander, it tastes better too.
