A healthy side dish with lots of vegetables for poori, chapathi, roti, set dosa. learnt this from my mother.

Ingredients Serving: 3

  1. French beans- 1/4 cup
  2. Carrot - 1/4 cup
  3. Green peas - 1/4 cup
  4. Potato - 1/4 cup
  5. Onion - 2
  6. Cauliflower - 1/4 cup
  7. Fresh coconut - 1/4 cup
  8. Fried gram - 1 1/2 tbsp
  9. Coriander leaves - 2 tbsp
  10. Pudina - 10 leaves
  11. Jeera - 1/2 tsp
  12. Black pepper - 5 to 6
  13. Green chilly - 4 to 5
  14. Ginger - 1/2 inch
  15. Oil - 2 tbsp
  16. Mustard - 1/2 tsp
  17. Hing - a pinch
  18. Curry leaves - 5 to 6
  19. Turmeric - a pinch
  20. Salt - according to taste

Instructions

  1. Chop all the vegetables mentioned in small pieces.
  2. In a pan add oil, when it is hot add mustard seeds. when the mustard seeds splutter add a pinch of hing, curry leaves and one finely chopped onion.
  3. When onion turns translucent, add all the vegetables. put water, turmeric, salt and allow the vegetables to cook.
  4. Meanwhile, grind fresh coconut, ginger, fried gram, green chilly, pudina, coriander leaves, one onion, black pepper and jeera to a smooth paste using water.
  5. Now, after 10 mins when the vegetables are half cooked, add the ground masala paste and again cook till the vegetables are completely done and till the raw smell of the masala paste goes away.
  6. Now our delicious and healthy south indian style vegetable saagu is ready to be served.
