Ingredients to make Kala jamoon !! Kalo jaam in bengali...

  • Milk Powder -  1 cup and half cup divided (use Everyday / Nido)
  • All Purpose Flour / Maida - 3 tblspn
  • Baking Soda  a pinch
  • Ghee / Clarified Butter - 1 tsp
  • Salt a pinch
  • Curd / Yogurt - 2 tblspn ( You can use milk too)
  • Oil or Ghee for Deep frying
  • 1/4 cup Pistachios crushed
  • A pinch of green food color diluted in 1 tbsp of milk
  • For Syrup: Sugar - 1.5 cup
  • Water - 2 cup
  • Cardamom Powder - 1 tsp ( I used 4 cardamom pods)
  • Rose water - few drops
  • Pinch of saffron strands ( optional )

How to make Kala jamoon !! Kalo jaam in bengali...

  1. In a sifted, add in flour,1 cup milk powder, salt and baking soda. Sieve them together.
  2. Now take this in a bowl, add in ghee and curd. Knead it to a soft sticky dough. Add more curd if needed. Let the dough rest for 5 mins  keeping covered ,while you make the syrup.
  3. In another bowl add the remaining half cup milk powder along with crushed pistachios if using and food colr dissolved in milk and knead into soft dough adding milk as required... Keep it covered until use..
  4. Take sugar and water in a sauce pan, bring it to boil. Simmer it for 5 to 8 mins till it gets little sticky. No need of string consistency.Now add in cardamom powder, saffron and rose essence. Mix well.
  5. Take small portion of dough and shape it into a flat thick disc, place a tsp of green dough n bring all the edges of the disc together as we do for parathas ensuring all the edges are sealed properly...
  6. Now carefully shape into oval shaped log like..
  7. Continue shaping the rest in the same way..
  8. Meanwhile heat oil or ghee for deep frying. Drop the jamuns in and fry till dark brown. The oil should be on low initially later put it on medium and fry until dark .
  9. Drain and drop into hot syrup (you can reheat the syrup till it is hot and then drop the jamun in). Cover and let them soak for 2 hours. Later serve and enjoy...
My Tip: While frying the jamoons intially fry them on low heat and later increase the heat and fry in medium until dark in color... Drain them well and to the syrup...oily jamoons will not absorb the syrup n end up hard n dry...
