I don't know how the milk was was it hot or warm????incase of hot milk that is the reason of not setting
Put whole green chilly in milk after adding the culture.ur curd will set. Other option is that u add more curd to the. Warm milk not hot milk. It will convert into curd Or keep it at a warmer place.
Maybe the milk was too hot..and dear the green chilli won't affect the flavour of the curd?
When setting curd check warmth of milk by dipping your little finger if it feels hot wait for a while and add 1 tsp curd to a bowl of warm milk set aside overnight or minimum 3-4 hrs (.tip you can add 1 tsp of corn flour too to the milk for firm curd)
the rsn behind not setting is weather. keep your milk little hot (just more than warm) set your curd in caserol. it will work
What I do is covering the milk vessel with hot Aluminium vessel. Near the gas in the kitchen and if I m available there I heat the upper vessel when gets cold. Generally I keep " Dhokaliyu" ( steamer for making dhokala over it.
It's due to weather..in winters whenever u set curd..put it into white flour tin as wheat flour gives warmth it will be set properly...and mame sure ur milk should be not too cold not hot..it should be warm and one more..add lttile more curd then u use in summers for setting
One more tip I can give you that wrap your warm curd bowl with woollen shawl..I hve always seen my mother to do this.now I follw this.and never fail..
