ABOUT Badusha RECIPE

A delicious south indian sweet, crispy dumpling in sugar syrup.

Ingredients Serving: 6

  1. All purpose flour - 1.5 cups
  2. Sugar - 1/2 tsp
  3. Curd - 1.5 tsp
  4. Ghee - 1/4 th cup
  5. Oil - 1/8 th cup
  6. Cooking soda - 2 pinches
  7. Water - 1/4 th cup
  8. Oil (for frying)
  9. For sugar syrup :
  10. Sugar - 1 cup
  11. Water - 1/2 cup
  12. Cardamom (crushed) - 2
  13. Lemon juice - 1/2 tsp

Instructions

  1. ADD 1/4 TH CUP GHEE IN A BOWL.
  2. ADD 1/8 TH CUP OIL TO IT.
  3. ADD 1/2 TSP SUGAR.
  4. ADD 1.5 TSP CURD AS WELL.
  5. PUT 2 PINCHES OF COOKING SODA.
  6. WHISK IT WELL UNTIL IT IS PASTY.
  7. ADD 1.5 CUPS FLOUR NOW.
  8. KNEAD A DOUGH USING 1/4 TH CUP WATER.
  9. THE DOUGH SHOULD BE SOFT. REST IT FOR 10 MINUTES
  10. MAKE A SUGAR SYRUP OF ONE STRING CONSISTENCY USING 1 CUP SUGAR + 1/2 CUP WATER.
  11. ADD 2 CARDAMOM PODS ( CRUSHED).
  12. ADD 1/2 TSP LEMON JUICE.
  13. DIVIDE THE DOUGH INTO 12 BALLS. TAKE EACH ONE AND PINCH THE EDGES BRINGING THEM INSIDE TO FORM THE BADUSHA.
  14. DEEP FRY THEM IN AMPLE OIL IN MEDIUM TO LOW HEAT.
  15. STRAIN THE FRIES BADUSHA AND DIP THEM IM SUGAR SYRUP.
