Ingredients: Macaroni A hand full each of coriander leaves and mint leaves Fresh orange juice Pieces of orange, deseeded and peeled Cheese Oregano Chili flakes Italian Seasoning Onion and bell peppers cut in cubes Olive oil Salt to taste The first step is to boil the macaroni till al Dante by adding some salt and oil. Once done, put it under cold running water. Put coriander, mint leaves and some four to five pods of garlic, cheese, a pinch of salt, oregano, chili flakes, olive oil in a mixer and give it a whisk. Add orange juice into the pesto and give it a nice mix. Now heat olive oil in a pan and add onion, capsicums and peeled, deseeded oranges. Throw in the macaroni, the Orange mint pesto, salt, Italian seasoning, shredded mozzarella cheese and give it a nice toss.... And plate it by garnishing it with some grated cheese, oranges and mint leaves.
