With a hint of sweetness from bell peppers and pumpkin and a warm hit from all the spice, this stew is comforting and delicious.

Ingredients Serving: 4

  1. 2 teaspoons olive oil
  2. 1 onion minced
  3. 2 carrot diced
  4. 2 garlic cloves minced
  5. 2 red bell peppers
  6. 1 cup boiled chickpeas
  7. 1 cup pumpkin diced
  8. 1 teaspoon ground cumin
  9. 1/2 tsp brown sugar
  10. 1 teaspoon paprika
  11. 1/4 tsp cinnamon powder
  12. salt acc to taste
  13. 3 tomatoes chopped
  14. 2 cups vegetable broth or water


  1. Heat oil in a pan and add the onions and garlic. Saute until onions are soft.
  2. Add the bell peppers to it and saute for 2 minutes until fragrant.
  3. Add the pumpkin, carrots and all the spices and cook for 5 minutes
  4. Add the chickpeas and the tomatoes. Cook for atleast 3 minutes and then add all the broth. Cover and simmer.
  5. Cook until the pumpkin is tender, almost 15 to 20 minutes.
  6. adjust seasoning

What is brown sugar and can we replace by normal sugar
