Ingredients Serving: 4

  1. rice 3 1/2 cups.
  2. rajma 1/2 cup.
  3. Soyabean 1/2 Cup.
  4. Urad daal 1/2 cup.
  5. spinach chopped 1 cup.
  6. carrot grated 1/2 cup.
  7. coriander leaves chopped 2 tbsp
  8. onion chopped 3
  9. ginger grated 2 tbsp
  10. Green chilli paste 2 tbsp
  11. salt to taste.
  12. oil 1/4 cup.
  13. Green chutney ( coriander, green chillies , mint , ginger and garlic) to serve with Uttapam.


  1. Soak rice in vessel for 6 hrs.minimum.
  2. Soak urad daal, Soyabean and Rajma also for 6 hrs.
  3. Grind them after 6 hrs. Cover and keep for fermentation for 6 to 8 hrs.
  4. Your batter will fermented as you want for your recepient.
  5. Heat 1 tbsp oil in a pan , Saute onions for 3 to 4 minutes. Turn off heat and cool.
  6. Now add washed and chopped Spinach in the batter.
  7. Add grated Carrots.Add ginger and chili. Adjust salt.
  8. Mix everything in the flour well.
  9. Heat non stick griddle, spread 1 tsp oil .
  10. Pour laddle full of batter .
  11. Cover and let it cook on one side.
  12. Flip over as one side cooks little brown.
  13. Cook browish on both the sides.
  14. Your protein packed Uttapam is ready to serve.
  15. Serve with green chutney or ketchup.
