ABOUT Quinoa Egg Fried Rice RECIPE

This can be a healthy quick fix one-pot meal on those days when one feels like relaxing without having to strain too much in the kitchen. Protein rice quinoa and eggs, both combined are recommended to be included in our diet. So here you are...... Quinoa Egg Fried rice....My style. Any other veggies of your choice can be added to make it more nutritious and wholesome. Enjoy it just as it is or with any side dish.

Ingredients Serving: 3

  1. 1/2 cup quinoa, soaked for 2 hours
  2. 1 cup mixed veggies (carrot, beans, peas, etc,), chopped
  3. 2-3 tbsp. ghee
  4. 1/2 tsp. cumin seeds
  5. 1-2 bay leaves
  6. 1-2 dry red chilies
  7. 2-3 garlic cloves, chopped
  8. 1" ginger, chopped
  9. 1 onion, sliced
  10. 1/2 tsp. red chili flakes
  11. 1 tsp. garam masala powder
  12. salt to taste
  13. 2 eggs, well beaten
  14. 2-3 tbsp. coriander leaves


  1. Cook the quinoa in enough water for 15 minutes or till they are soft. Drain and keep aside. Heat 1 tsp. oil in a pan and scramble the eggs with a pinch of salt. Keep aside.
  2. Heat remaining oil and temper with bay leaves, dry red chilies and cumin seeds. Saute for a few seconds. Add the ginger, garlic
  3. followed by the onions. Stir fry till light brown.
  4. Add all chopped veggies & continue to cook, covered till they are soft.
  5. Now add all the dry spices and give it a stir.
  6. Add in the cooked quinoa and stir fry for 2 minutes.
  7. Switch off the flame and add the eggs
  8. and coriander leaves. Let it remain covered for 2-3 minutes.
  9. This healthy one-pot delicacy can be relished as it is or with any side dish.
