ABOUT Aaloo Kachoris...(Potato Kachoris) RECIPE

Yummy and flaky beauties popular all over India as an evening snack that is loved by many at tea-time. Aaloo kachori is one of the most easiest to do as well as an instant hit with the kids too. Much similar to a aaloo samosa, there is little difference in using of ingredients. The taste however is mindblowing and is deliciously crunchy to the last bite.

Ingredients Serving: 6

  1. Potatoes boiled and mashed 6
  2. Green peas boiled 1 cup
  3. Salt 1 tbsp
  4. Oil 2 tbsp
  5. Asafoetida 1/8 tsp
  6. Onions sliced 2
  7. Green chillies chopped 3
  8. Red chilli flakes 1 tsp
  9. Turmeric 1/2 tsp
  10. Garam masala 1 tsp
  11. Coriander seeds crushed 1 tbsp
  12. Coriander leaves finely chopped 1/4 cup
  13. FOR THE KACHORI DOUGH ; All purpose flour 2 cups
  14. Salt 1 tsp
  15. Carom seeds 1 tsp
  16. Cumin seeds 1 tsp
  17. Warm milk 1 cup
  18. Water 1/4 cup (or as required)

Instructions

  1. Knead a smooth dough with all the ingredients listed under it.
  2. Cover and set aside for 20 minutes.
  3. In a pan, heat oil and add crushed coriander seeds and chopped green chillies at first.
  4. Next add sliced onions.
  5. Saute them until translucent.
  6. Now add the rest of the spices.
  7. And finally the mashed potatoes and boiled peas.
  8. Mix well and garnish with chopped coriander.
  9. Adjust salt according to taste.
  10. Divide the dough into portions and roll each into a small disc.
  11. Fill each with about 2 tablespoon of the potato mix and gather the edges together to form a pleat bringing it to the centre and then pinching it down to seal it properly.
  12. Make all in similar fashion and deep fry in hot oil on a low heat.
  13. Serve them hot with green chutney or any dip of your choice.
