Ingredients Serving: 5

  1. Rice 3 cups
  2. Onion 4
  3. Tomato 4
  4. Green chillies 5
  5. Coconut milk 2 cups
  6. Coriander leaves chopped finely 1 cup
  7. Mint leaves finely chopped 1/2 cup
  8. Cinnamon stick 2 inch long
  9. Cloves 5 to 6
  10. Cardamom 3
  11. Bay leaf 1
  12. Star anise 1
  13. Ghee or butter 4 tablespoons
  14. Water 3 Cups
  15. Salt to taste

Instructions

  1. Soak rice in water for 30 minutes.
  2. In pressure cooker melt butter and add all spices.
  3. Add chopped green chilli coriander and mint. Saute well.
  4. Add finely chopped onion, tomatoes and saute nicely. Add coconut milk and water.
  5. Add salt and let the mixture come to a boil.
  6. Add rice and close the pressure cooker and steam cook for 20 minutes on a low flame.
  7. After 20 minutes, open the cooker and serve hot.
