Ingredients to make Chekkalu

  • Rice flour 1 cup
  • water 1 cup
  • curry leaves chopped 5-10
  • salt to taste
  • Red chilli powder 1tsp or taste
  • chilli flakes 1/2 tsp (optional)
  • white sesame seeds 1 tbsp
  • cumin seeds 1tsp
  • cold water as required to knead dough
  • Bengal gram (channa dal) 1/4 cup (soaked)
  • butter 1 tbsp
  • oil for frying
  • Plastic sheet to spread mixture

How to make Chekkalu

  1. Boil water in a pan add all ingredients in it except rice flour, once it starts boiling add rice flour & mix properly, once cooled down adding little by little cold water knead to make a dough.keep aside & cover,check seasoning.
  2. Heat oil in a deep pan for frying, making this chekkalu disc.divide a dough &use any clean plastic sheet.take a small piece of dough on top cover another sheet flatten using palm.
  3. Remove from sheet & drop carefully in hot oil .cook both sides till it turn golden same for all pieces.once it cooled down store it in an air tight container.

My Tip:

Dough consistency is appropriate only when it forms uneven edges when pressed on the sheet.Fry on med heat temperature for golden color & crispiness.
