This is an authentic Mughlai shahi paneer in white onion cashew gravy sans tomatoes.. This authentic Mughlai andaaz_e_shahi paneer has got its unique taste and aroma which is entirely different from the punjabi red gravy shahi paneer or paneer butter masala.

Ingredients Serving: 4

  1. Cottage cheese (paneer) 250g
  2. Cashew nuts 50g
  3. Garlic and ginger paste 10 g
  4. Curd 1/4 cup
  5. Milk full cream 1/4 cup
  6. Saffron strands (few)
  7. Onion pink 2 medium sized
  8. Cinnamon 1 stick
  9. Bay leaf 1
  10. Clove two
  11. Cumin 10g
  12. Cardamom ( badi elaichi )
  13. Cardamom powder ( choti elaichi powder )
  14. Green chillies slit longitudenally 1
  15. Garam masala 1 teaspoon
  16. Salt as per taste.
  17. Desi ghee 2 table spoon

Instructions

  1. Soak cashews for 10 minutes and then make a fine paste by blending it in the blender.
  2. In a full cream warm milk add saffron strands .
  3. Keep a pan on a medium flame. Add ghee let it become warm .add all whole dry spices .
  4. On the other side of the burner boil chopped onions and make them tender ..keep it under the fan for cooling . Once cool grind it into a fine paste along with ginger and garlic .
  5. Pour the onion ginger garlic paste into the pan ..Allow them to simmer ..Please dont caramalize the onions as we have to make a white gravy..
  6. Keep on stirring for 5 minutes and now add milk and saffron ..stir it thoroughly ..Also add previously soaked cashews blended into cashew paste..
  7. Add curd now ..simultaneously add slit green chillies to make it mild spicy too. Stir it on a medium flame...
  8. Adjust its consistency by adding water or milk .. Add salt , garam masala and cardamom powder. This imparts a royal shahi aroma .
  9. Cut paneer into desired shapes cubical , triangles or both and immerse in this rich creamy luscious aromatic gravy .Allow it to simmer it for 2-3 more minutes and our Authentic Mughlai Shahi Paneer is ready . Enjoy with laccha paranthas or naan ..
