Medu vada

Ingredients to make Medu vada

  • 3/ 4 cup - 95 gms mash dal / urad dal/ white lentils
  • 1 onion medium size
  • 1/2 inch ginger(optional)
  • a generous pinch of baking soda
  • chopped curry leaves ( optional)
  • Chopped coriander leaves
  • salt to taste
  • oil to deep fry

How to make Medu vada

  1. Wash and soak Dal for 4-5 hrs.
  2. Grind it to a paste in a mixer grinder, by adding a little water. Mix it thoroughly with hand to allow aeration and close the lid and keep it the fridge over night.
  3. If you are in a hurry continue with the next steps.
  4. Add all the above listed ingredients and mix well .
  5. Heat oil in kadhai. Wet your hands with water, make roundels of the batter place it on one of the palms and make a hole with the finger of other hand .
  6. Slowly drop it in hot oil and cook for 1 minute.
  7. Slowly turn it the other side and fry until the colour changes to the one in picture .
  8. Remove it and drain it in a paper towel.
  9. Serve hot with chutney or ketchup .

My Tip:

Over years of cooking I have noticed that vada made from freshly grounded batter are hard from inside .so I prefer over night resting. Adding of onion, ginger, chopped, coriander leaves, curry leaves is up to you.

Sry to say don't soak dal for 4 to 5 hours and don't keep in refrigerator. Better soak it for 1/2 an hour or 45 minutes and prepare as soon as u grind it and add salt to it while grinding only.
