ABOUT Paneer gluten free millet raisin cake/ High protein cake ( No baking powder and soda ) in cooker RECIPE

High protein , highly nutritive sponge cake . This cake includes various millets , oats . egg , banana and raisins . A wholesome snack / breakfast / brunch option . Diabetic friendly as well when omit the brown sugar that is used .

Ingredients Serving: 5

  1. Paneer 75 grams
  2. Whole milk 200 ml
  3. Ripe Banana large 1
  4. Finger millet flour / Ragi flour 50 grams
  5. Fox tail millet flour 75 grams
  6. Pearl millet flour / Bajra flour 75 grams
  7. Oats 50 grams
  8. Egg large 1
  9. Brown sugar 50 grams ( adjust as per your taste )
  10. Vanilla essence 1 teaspoon
  11. Melted butter ( room temperature ) 50 ml
  12. Black raisins a fistful
  13. Butter for greasing the tin .

Instructions

  1. In a blender , blend paneer by adding little milk to a smooth batter consistency .
  2. Meantime , preheat the cooker using salt for 15 minutes in low heat .
  3. Coming to the cake mixture , Add one banana and blend again .
  4. Transfer this paneer banana batter to a bowl .
  5. In the same blender , blend oats with little milk to a smooth paste consistency .
  6. Add this to the paneer banana batter .
  7. Add the finger miller flour gradually to the prepared ground batter while mixing gently .
  8. Similarly add pearl millet flour and mix .
  9. In another bowl , beat and pour 1 egg .
  10. Whisk the egg to smooth creamy texture.
  11. Add the powdered brown sugar and whisk again .
  12. Now add this egg mixture to the prepared flour batter .
  13. Adjust the consistency by adding milk if required .
  14. The cake batter mustn’t be too tight nor too runny .
  15. Add vanilla essence . Mix gently .
  16. Add raisins .
  17. Add butter .
  18. Mix gently .
  19. Grease the cake tin .
  20. Pour the cake batter in the greased tin .
  21. Tap the tin once before setting to bake .
  22. This ensures air bubbles to escape is any in the batter .
  23. Bake in the cooker for 25 minutes in low to medium heat .
  24. Do check after first 15 minutes . Baking time varies .
  25. Do use a fork to check . A clean fork indicates the cake is perfectly baked .
  26. Cake is ready .
  27. Allow the cake to cool completely in the tin itself by taking it out from the cooker .
  28. Once cooled. tilt the cake in a plate .
  29. A delicious , nutritive cake is ready .
  30. Cut into slices and enjoy .
