If you love having eggs then this a great recipe for breakfast. Kids too love this. Added carrot, peas, paneer and spinach. This vegetable egg frittata or egg pizza is full of veggies and nutrients.

Break the eggs in a wide serving bowl and whisk well. Add salt as per taste.
Heat the olive oil in a non-stick pan and cook onions until it softens and becomes golden in color.
To this add grated carrot, peas, green chilies, mint leaves and cook for about 5 min. Peas and carrot should be cooked before adding eggs.
Now add salted paneer, spinach & black pepper. Sprinkle salt as well as per taste. Cook for another 2-3 min.
low the flame and let the pan cool down in 2-3 min. After few min when pan become cold comparatively add beaten egg.
Mix it well and set it properly in the pan. It will be a thick layer now in the pan. Now you make out why did I mention to make cold this pan.
Now keep this on low flame and cover it with the lid. It takes around 2-3 min to cook from one side.
You will see a little liquividy from upper side, so it will be like that when it is cooked in a pan. You have to flip it on other side to cook it.
It’s a good idea to make this in an oven.There you don’t have to flip. Again cook for 2-3 min
Serve in a plate and have it in your breakfast.
