ABOUT Aloo Gobhi Saag !!! RECIPE

Aloo gobhi saag is a popular North Indian gravy. It is versatile and one of its kind. The golden fried potato and cauliflower with the saag gravy takes it to another level. It is like the fusion of saag and regular aloo gobhi. A perfect main course that goes well with any roti / Naan / rice dishes. Mild and subtle gravy that appeals to everyone's taste!

Ingredients Serving: 4

  1. 1 Large onion (chopped)
  2. 3 Tomatoes (chopped)
  3. 3 Bunches / 150 gms/4 cups spinach
  4. 1 inch ginger chopped
  5. 3 cloves- garlic chopped
  6.  4 Green chillies chopped
  7. 1/4 cup Mint / pudina leaves
  8. 1/3 cup coriander/ cilantro leaves
  9.  2 large potatoes cubed
  10. 2 cups cauliflower florets
  11. 3 tbsp yoghurt (well beaten)
  12. 3 tbsp oil
  13. Salt to taste
  14. 2 tsp coriander powder
  15. 1 tsp cumin powder
  16. 1 tsp red chilli powder
  17. 1 tsp garam masala powder

Instructions

  1. In a deep pan add 2 cups of water and bring this to boil, now add the spinach leaves. Boil this for a couple of minutes without covering.
  2. Later drain the water and allow it to cool. In a pan add a tbsp of oil, once hot add the green chilli pieces, ginger and garlic pieces and fry for a minute.
  3. Now add the mint and coriander leaves, saute for couple of minutes. Cool and grind this into a paste along with blanched spinach and set aside. Now deep fry the potatoes and cauliflowers till the turn light golden.
  4. In a non stick pan add 2 tbsp oil. Once hot, add the chopped onions and fry until pinkish. Now add the ginger garlic paste and chopped tomatoes..
  5. Cook this until tomatoes are slightly dry n oil starts to ooze out, next add the dry masalas, salt n chilli powder. Saute for a minute.
  6. Now stir the spinach, mint, coriander puree. Cook this on a low heat for couple of minutes. Now stir the beaten yoghurt..
  7. Cook this on low heat until oil oozes out a bit. Next stir in the fried potato n cauliflower. If the gravy gets dried up, add water as required and adjust the consistency to your preference.
  8. Cook this on medium heat for 8 to 10 minutes. Now the Aloo gobhi saag is ready to be eaten with roti / parathas/ Naan / rice. Lusciously green n flavorful.
