ABOUT Raw Mango Rice RECIPE

Rice stir fried with grated raw mango, peanuts and Indian spices.

Ingredients Serving: 4

  1. Rice - 1.5 cup
  2. Raw mango, grated - 2
  3. Green chilies , chopped -1 tbsp
  4. Ginger, chopped- 2 tsp
  5. Curry leaves -10
  6. tempering-
  7. Cooking oil or ghee-1/4 cup
  8. Peanuts -1/4 cup
  9. Cashews - 2 tbsp
  10. Urad daal/white lentils-1 tbsp
  11. Mustard seeds/rai -2 tsp
  12. Asafoetida/hing - 1/2 tsp
  13. Whole red chiles - 4

Instructions

  1. Wash and soak rice for approx 15 minutes.
  2. In a big pan, add approx 5 cup water, 1 tsp of salt and soaked rice and cook till done.
  3. Drain the rice on a colander to drain the extra water .
  4. Heat oil in a pan and fry the peanuts and cashews on low flame till golden and crisp. Drain the peanuts and cashews on the boiled rice.
  5. Now add urad daal and mustard seeds in the same pan.
  6. When daal/ lentil become golden then add curry leaves, chopped green chilies, whole red chilies and asafoetida.
  7. Mix well and then add turmeric powder and grated raw mango.
  8. Cover and cook on low heat till mango becomes slightly soft.
  9. Now mix boiled rice, ginger and salt, mix well.
  10. Saute for few seconds till everything is mixed well.
  11. Add some fresh coriander and serve hot or cold.
