ABOUT Checkerboard cookies (Eggless) RECIPE

These are very light, attractive and delicious buttery cookies. Noone can just resist with one.

Ingredients Serving: 3

  1. APF/Maida 2cup
  2. Oil 1/2cup
  3. Sugar 1/2 cup
  4. Sooji 4tbsp
  5. Cardamom powder 1tsp
  6. Vanilla Essence 1tsp
  7. Cocoa powder 2tbsp
  8. Salt a pinch

Instructions

  1. Mix 1cup maida, 2tbsp sooji, 1/4cup sugar, pinch salt, 1/2tsp cardamom powder,vanilla essence and 1/4 cup oil, make a stiff dough.
  2. Make another dough by adding all the above ingredients and cocoa powder except vanilla essence.
  3. Roll both the doughs, cling wrap and keep in the fridge for about 30mins to 1hour.
  4. Take out, roll both the slabs and carefully cut lengthwise into strips of equal sizes.
  5. Then arrange the strips alternatively crosswise.
  6. Cling wrap and keep in the fridge for 30min to 1hour.
  7. Take out, remove the cling wrap and cut in desired sizes carefully.
  8. Bake for 12-15 mins in a preheated oven at 180°C.
  9. Take out and cool for few mins. Serve.
