ABOUT Wholewheat spinach quiche -healthy & low fat RECIPE

A healthy twist to this delicious spinach quiche. Made with wholewheat and without - a low fat dish.

Ingredients Serving: 4

  1. For Base:
  2. 375 gms whole wheat flour
  3. 175 gms Unsalted Butter
  4. 2-3 tbsp Milk / Water
  5. Salt 1/4 tsp(omit if using salted butter)
  6. For Filling:
  7. 500gms Spinach (Raw) shredded
  8. 100 gms/ 1 cup Mushroom sauteed till golden brown
  9. 3 tbsp butter
  10. 4 cloves garlic
  11. 100 gms Paneer/ Cottage Cheese
  12. 1 medium size Onion sliced thin /chopped
  13. 2 medium sized tomatoes
  14. Salt to taste
  15. 1/4 tsp black pepper
  16. Red Chilli Powder to taste( we use degi mirch)
  17. 1/4 tsp garam masala powder
  18. 1 tsp Oil to cook
  19. TOPPING:
  20. 1/4 cup Grated Mozzarella Cheese ( I used Frolic Cheese)
  21. 1 medium Egg Beaten
  22. Coriander leaves to garnish

Instructions

  1. First prepare the pastry crust: In a bowl , mix together butter and flour. Butter should be at room temperature and not melted.
  2. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. Try to work quickly so that it does not become greasy.
  3. Refrigerate this dough for 15 minutes covered in a cling wrap.
  4. Meanwhile preheat your oven at 180 degree c.
  5. After 15 minutes,take the dough and roll it into a 8 inch diameter.
  6. Line your baking tray with this flat dough and press well on the sides and centre to line it properly in the pie pan.
  7. Press it nicely form every side to place it properly. Now with a fork make dot marks on the base to ensure an even bake and for the pastry crust to not rise.
  8. Bake this for 5-7 minutes at 180 degreesC .Take it out once done and keep aside. Keep checking we just need it to get baked just a bit inside before baking it again with the filling.
  9. Meanwhile lets prepare the filling: Heat a pan, add oil and butter. Add garlic. Cook a bit and then add onion.
  10. Cook till golden brown and add tomatoes. Cook till soft and gravy leaves oil. Add salt, pepper, red chili, garam masala.
  11. Add spinach and cook till soft and water evaporates. Add paneer/cottage cheese and cook for another minute and till water evaporates.
  12. Add sauteed mushrooms and mix well.Put it off flame. Now pour this mixture on the pie crust.
  13. Spread evenly. Now put the grated mozzarella cheese on top.Now pour the beaten egg onto the cheese.
  14. Bake at 180 degrees C for about 15 minutes or till golden brown.
  15. Garnish with coriander leaves.
