ABOUT Instant Pulihora / Puliogare !!! RECIPE

Pulihora is a must made dish on all the auspicious and festive days !!!  My mother used to prepare the mix a day before and store in the fridge so that she can prepare pulihora the next day. Even i used to follow the same until i tried out with tamarind paste. The store bought mix is easy to prepare but does not satisfy you with the taste.but this method gives me cent percent results, with no time waste in preparations. All you need is store bought Tamarind paste, I used Priya tamarind as the color and taste is perfect.

Ingredients Serving: 4

  1. 1 cup Raw sona masoori or any rice
  2. 3 tbsp oil
  3. 2 tsp urad dal
  4. 1 Tbsp Chana dal
  5. 2 dry red chillies
  6. 2 Green chillies slit
  7. 1/4 tsp Methi / fenugreek seeds
  8. 1 tbsp sesame seeds
  9. 2 tbsp raw / roasted peanuts( i used roasted )
  10. 1/8 tsp turmeric
  11. A pinch asoefetida / hing
  12. A sprig curry leaves ( i did not add as i had none left ...)
  13. 1/2 tsp cumin seeds
  14. 1/2tsp Mustard seeds
  15. 1 tbsp  coriander powder (optional )
  16. 2 tbsp Tamarind paste ( i used Priya brand )
  17. Salt to taste...

Instructions

  1. Firstly wash the rice thoroughly and cook like regular rice. Once cooked , set aside to cool down.
  2. For tempering- heat a pan, add oil, once hot add the urad dal, chana dal, methi seeds, peanuts if using raw.
  3. Fry ttill they turn golden. Now add the mustard, cumin seeds, allow them to splutter.
  4. Now add turmeric, hing, red chillies broken into pieces, green chillies. Fry these for a min or two.
  5. Now add in the curry leaves ( if using) roasted peanuts and sesame seeds, fry for a minute or two just until sesame starts to pop.
  6. Now turn off the heat. Next add the coriander powder and salt to the rice and mix thoroughly. Coriander powder enriches its flavor n separates each and every grain. Now add the tempering and tamarind paste to the rice..
  7. No need to cook the tamarind paste as it is already coked and preserved. Mix everything well. Once done serve and enjoy.
  8. Awesome, flavorful, authentic pulihora made in a jiffy.
