Veg Egg Rolls

This is a delicious breakfast, egg rolls stuffed with veggies inside.

Ingredients Serving: 3

  1. 6 eggs
  2. 1 tesp black pepper powder
  3. salt to taste
  4. 3 tbsp milk
  5. 3 tbsp grated carrot
  6. 3 tbsp finely chopped capsicum
  7. 1/2 onion finely chopped


  1. Whisk eggs along with pepper,salt and milk
  2. Divide the mixture into 2 separate bowls
  3. In a pan add 1/2 tesp oil saute carrot with half the onions for 2 minutes ,remove and cool.
  4. Repeat with capsicum
  5. Add them separately to the two egg mixtures,and mix well.
  6. Place a non stick skillet on low heat
  7. Pour 1 tesp of oil, swirl around the pan
  8. Pour half the carrot mixture ,swirl around the skillet evenly spreading the carrot and onion
  9. Once cooked ,roll the omelet with a spatula,leaving a small portion at the end
  10. Gently slide it towards you on the skillet.
  11. Drizzle oil to the remaining part of the skillet,pour half capsicum mixture,spread evenly,let cook
  12. Roll the carrot omelet over the capsicum omelet leaving a small portion at the end,slide it towards you on the skillet.
  13. Repeat this with remaining carrot and capsicum mixture
  14. Once done remove gently and place over cutting board
  15. Let cool ,slice and serve with tomato ketchup
