Whenever people drop in or when we call people for virunthu(we invite newly married couples for lunch or dinner), the first sweet which amma makes is kesari,Kesari is a staple southindian sweet, it is so simple to make. But sometimes if you miss a measurement or add less ghee, then kesari can turn out so sticky. Instead of water, i added milk. And i added some saffron and lots of apricots in it. I even cooked this kesari a little longer so i made pieces out of it. Mostly kids luv swrets,, we cant satisfy that ,so we add in it helathy ingredients,,so ia give teiat of apricots n natural colour saffron with milk ,I hope you will try this out and let me know how it turned out..

Ingredients Serving: 4

  1. Rava [semolina] -1/2 cup
  2. Sugar – 1 cup
  3. Milk – 2 cup
  4. Apricot - 10 fruit /dry fruit
  5. Ghee / Clarified Butter – 1/2 cup
  6. Cardamom Powder – 1 tsp
  7. Saffron – a pinch
  8. Nuts & Dried Fruits – 1/2 cup (if u like saute until briwn add in last) i dnt like so i cant add this recipe

Instructions

  1. In a tsp of ghee fry the nuts and dried fruits till golden. Set aside. If u want ,, i can't add
  2. Take apricots add some little amount of milk blend finely, keep aside
  3. Take a non stick kadai and heat a tsp of ghee. Add in sooji and fry for a couple of mins
  4. Now add in milk and mix well continously so lumps are formed.
  5. Once everything is mixed well. Cover the pan and cook on a very low flame for 10 mins till all milk is absorbed and the sooji is cooked.
  6. Once cooked add apricot mixture steam well, Now add in sugar and mix well. The mixture will turn runny again. 
  7. Now keep stirring so nothing sticks to the pan. Add in cardamom and saffron. Mix well.
  8. Nw healthy yum yum apricot milk rava kesari ready,, if u want roasted cashews add now
