This delicious side dish made from Arbi is one of the favourites at our house.Boiled and fried arbi seasoned with beautiful spices tastes heavenly with kadhi chawal or with roti too.My son eats it by itself also like finger chips.

Ingredients Serving: 4

  1. Arbi/colocasia root 500 gms
  2. oil 3 tbsp
  3. Carom seeds 1 tsp
  4. garlic 5 cloves
  5. Asafetida 1 pinch
  6. turmeric 1/2 tsp
  7. chilli powder 1 tsp
  8. coriander cumin powder 3 tsp
  9. fennel seeds powder 1 tsp
  10. Dry mango powder 1 tsp
  11. Garam masala 1/2 tsp
  12. salt to taste
  13. coriander for garnishing


  1. Wash the Arbi properly under running water.Take a pressure cooker and put washed arbi alongwith water and take 2 whistles.
  2. When pressure releases transfer to a sieve so that all water drains out.
  3. Peel the arbi and keep a broad pan to heat on gas.
  4. Put 3 tbsp oil in the pan and add some Arbi to it when oil becomes hot.
  5. Shallow fry on medium heat till these turn golden brown from all sides.
  6. Fry all the arbi similarly and take in a plate.Press each arbi with a broad based bowl gently to flatten it.
  7. Now put carom seeds and chopped garlic in the oil.
  8. Put all flattened arbi in this.
  9. Make a spice mix with all the spices.
  10. Sprinkle this spice mix all over the arbis.
  11. Toss lightly such that the arbis are covered well with spices.Cover and keep for a minute.
  12. Give a toss lightly again and delicious arbi fry is ready to serve with phulkas or kadhi chawal.

Superb and simple recipe mam. My mum also make it like this except for garlic, which was a nice add on. Simply delicious
