Tiranga Appe

Ingredients to make Tiranga Appe

  • Idli batter - 1+ 1/2 cups
  • carrot - medium - pureed
  • Boiled green peas - 1/4 cup
  • oil - As required
  • coriander leaves ground to a paste 1/ 4 cup blanched pureed spinach leaves or everyday green coriander / mint leaves chutney

How to make Tiranga Appe

  1. Divide Batter into 3 equal portions.
  2. Portion 1 - Mix in pureed carrot
  3. Portion 2 - Mix it with the green mixture - you must have prepared either green peas mixture or spinach leaves mixture or green chutney.
  4. Portion 3 - keep it as it is
  5. In this way all 3 colored batters are ready
  6. Heat Appe pan, when hot , add few drops of oil in each hole
  7. Now pour ladle full of white batter into each hole, as many as is filled slightly more than halfway.
  8. Close with lid and cook for couple of minutes.
  9. Open lid , flip over and cook the other side as well for couple of minutes. Do not over cook as white color will turn to brownish and it will get over cooked
  10. Repeat above process with remaining 2 portions - orange and Green
  11. Appes of all the 3 colors are ready. Tiranga Appes ready. Serve with any fiery chutney of your choice

My Tip:

Tip : Need to mix in enough purees / chutneys so that batter is of dropping consistency. In case it is a bit loose mix in with some fine semolina or powdered oats, keep it aside for a few minutes so that a dropping consistency batter is obtained - suitable for Appe preparation. I usually prepare with the last portion of batter remaining after I have prepared idlis for a couple of days, hence makes an enjoyable variation
