ABOUT Lemon Rice RECIPE

This recipe comes from our South Indian friends and it's the best Lemon rice I have ever eaten!

Ingredients Serving: 5

  1. 6 cups cooked white rice
  2. Juice of 3 lemons
  3. Salt to taste
  4. 2 tbsp olive oil
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp cumin seeds
  7. 4 - 5 red whole chili
  8. dried 1.5 tsp urad dal / white gram lentil
  9. 8 -10 Curry Leaves
  10. 1 tsp turmeric powder
  11. Black Pepper to taste
  12. Pinch of Asafoetida

Instructions

  1. In a big bowl, add cooked rice. To it add lemon juice and salt to taste. Mix using hands and adjust salt if needed. In a skillet, add oil.
  2. Once hot, add mustard seeds, cumin seeds, red whole chilies dried and white gram lentil and let it cook on med-low for 3-5 mins until cumin seeds and mustard seeds sputter and lentil gets cooked and crunchy.
  3. Take it off heat. Add chopped curry leaves, turmeric powder, black pepper and asafoetida and cook it for another minute.
  4. Add the tempering to the rice and mix using hands or wooden spoon until it gets mixed properly. Serve as it is or warm up more as and when needed.
