ABOUT Aam raas with sargunde RECIPE

Summer is becomes extra special because it is also the season when king of fruits arrives. This is a very common recipe but prepared in different ways at every house in india. I am sharing my way of preparing aam ras which we tradionally eat with sargunde in vidarbha.

Ingredients Serving: 4

  1. 3 mangoes
  2. 2 tbsp sugar or as per requirement
  3. salt to taste
  4. 1 glass water
  5. 3 cup wheat rawa
  6. 1 cup whole purpose flour
  7. oil to grease
  8. Long thick wooden skewers or sticks

Instructions

  1. For sargunde mix wheat rawa and salt, whole purpose flour with water for 3 hours.
  2. Knead a soft dough. Roll thin strings on a flat surface. Grease the skewers or sticks with oil and roll the strings it on the skewer such that when you remove it must look like tendrill.
  3. Keep it in sun for drying for a 5 hours and remove gently without breaking it.
  4. Boil water and bring this homemade noodles to a boil. Keep it aside.
  5. For aam ras squeeze out the juice from mangoes and churn it till it becomes smooth. Add sugar, salt and churn again.
  6. Take water in a bowl and add all the seeds and cover in it. Remove excess juice , use a spoon to scrap off pulp from the cover and add this water into the mango juice.
  7. Churn once more till the lumps are dissolved. Serve chilled with sargunde.
