ABOUT Palong Shaaker Chorchori/Mixed Vegetable Bengali Style RECIPE

Chorchori is a mish-mash of vegetables in bengali. Chorchori is probably the most adaptable vegetarian dish. The basic rule is to use whatever leftover vegetables you have in hand. Many a times we add fish heads to the chorchori.

Ingredients Serving: 4

  1. 500 gms Spinach/Palak/Palong Shaak washed and chopped roughly
  2. 2 Ridge gourd peeled and cubed
  3. 2 potatoes washed properly and cubed with skins on
  4. 1 radish peeled and cubed
  5. 1 brinjal cubed
  6. 500 gms pumpkin cubed
  7. 4-5 pieces bori/bengali vadiyan
  8. 1 tspn panch phoron
  9. 2 Dry Whole Red chillies
  10. 2 green chillies
  11. 1 heaped tspn poppy Seed paste
  12. salt to taste
  13. 1 tspn sugar
  14. 1/2 tspn turmeric
  15. 1/2 tspn chilli pwd
  16. mustard oil


  1. Heat mustard oil in a kadai and let it smoke. Then add the bori and fry till crisp and keep aside.
  2. Now in the same oil add half tspn panch phoron. Then add the potatoes and saute for a minute or two.
  3. Add rest of the vegetables excluding the spinach. Add the powdered spices and salt. Add the green chillies also. Cover and cook.
  4. Once the vegetables are 3/4th done, add the chopped spinach and cook on high flame so that the vegetables are fully done and all the water dries up.
  5. Add the poppy seeds, paste and mix well. Once the vegetables come together transfer it to a bowl and keep aside.
  6. Now in the same pan, add some more mustard oil. Add dry red chillies and rest of the panch phoron and sugar. Once the sugar starts melting add the cooked vegetables into this.
  7. Saute the vegetables on a high flame, till you get a beautiful aroma. Transfer it to a serving bowl and add the crushed fried boris on top. Serve with steamed rice.
