ABOUT KASHMIRI PULAO RECIPE

Kashmiri pulao is a flavourful and rich dish cooked with dry fruits and flavoured with saffron and whole spices.

Ingredients Serving: 2

  1. Basmati rice .. 1 cup
  2. Cashew nuts ... few
  3. Almonds ........ few
  4. Walnuts .. few
  5. Raisins ..... 1 tbsp
  6. Black cardamom .. 1
  7. Green cardamoms .. 4
  8. Cloves .. 4
  9. Cinnamon stick .. 1 piece
  10. Saffron ... 2 pinches
  11. Milk .... 1/4 cup
  12. Salt ......... to taste
  13. Cherries or pine apple pieces .. for garnishing
  14. Ghee ......... 3 tbsps

Instructions

  1. Wash the rice and set aside.
  2. Heat a little ghee and fry the dry fruits and set aside.
  3. Soak the saffron in the warm milk.
  4. Heat the ghee in a pan and tip in the whole spices.
  5. When they leave out an aroma add the rice and saute for half a minute.
  6. Add little less than 1 and 3/4 th cups of water and salt. Let it boil.
  7. When the rice is 3/4ths done add the saffron infused milk and keep it for dum on low flame.
  8. Finally add the fried dry fruits and garnish with lightly fried cherries or pine apple chunks.
