ABOUT Spinach and Cottage Cheese Bolani with a twist (Afghani Delicacy) RECIPE

Afghani Bolani bread is quite similar to the Indian style stuffed paratha or Mexican quesadilla, except that it has fewer and simpler ingredients. In this recipe I used whole wheat flour in place of all purpose flour (maida).

Ingredients Serving: 3

  1. For Dough : Whole Wheat Flour – 1 Cup
  2. Salt – a pinch
  3. Oil – 1 tsp
  4. For Stuffing : Spinach – ¼ cup (blanched and chopped)
  5. Garlic Cloves – 2 (minced)
  6. Cottage Cheese – ¼ Cup (crumbled)
  7. Salt – to taste
  8. Green Chillies – 2 (chopped)
  9. Fresh Coriander Leaves – 2 tbsp (finely chopped)
  10. Oil – 2 tsp
  11. Oil – for making Bolani

Instructions

  1. For Dough : In a large mouth bowl add all the ingredients and mix well. Now add water little by little and make a soft dough. Cover it and keep it aside for 20 to 30 minutes.
  2. For Stuffing : Heat oil in a pan and add minced garlic. Saute it for a few seconds. Now add spinach and green chillies and stir for 2 to 3 minutes.
  3. Now add cottage cheese, coriander leaves and salt. Mix well and stir for another 2 to 3 minutes.
  4. Switch off the flame. Transfer the spinach and cottage cheese mixture into a bowl.
  5. To make bolani, make medium sized balls with the dough and roll it like roti with the help of a rolling pin.
  6. Now put some spinach and cottage cheese mixture on the rolled roti on half part and cover it with the remaining part of rolled roti like a half circle.
  7. With the help of the fork, press and seal the sides of the bolani.
  8. Heat 2 tbsp oil in a non sticky pan, and place the stuffed bolani over it. Cook it from the both sides until golden brown and crisp.
  9. Repeat the process to make more bolani.
  10. Cut the bolani into halves and serve hot with yogurt.
