About Creamy Spinach Stuffed Mushrooms Recipe

This is my go to recipe to use spinach at any point of time. The combination of creamy spinach and mushrooms is absolutely divine.

Creamy Spinach Stuffed Mushrooms

Ingredients to make Creamy Spinach Stuffed Mushrooms

  • For the marinade : 2 tsps olive oil
  • 1/2 tsp salt
  • 1/2 tsp crushed black pepper
  • 1/2 tsp Italian seasoning
  • 1 clove of garlic (crushed)
  • 20 pieces of mushroom (hollowed out)
  • For the spinach mixture:
  • 2 cups spinach leaves
  • 1/2 cup corn kernels
  • 1 knob of butter
  • salt to taste
  • 1/4 cup grated cheddar
  • 1/2 cup cream
  • 1 tsp red chilli flakes
  • Mozzarella to garnish

How to make Creamy Spinach Stuffed Mushrooms

  1. First mix all the ingredients for the marinade together. Toss the mushrooms till they are coated and set aside.
  2. Add your spinach leaves to a pot of boiling water for about 1 minute and then take them out. Immediately transfer to a bowl of chilled water.
  3. Once they cool down a bit, transfer them to a chopping board. Place each leaf on top of the other and then place this stack horizontally on your board.
  4. Now chop it vertically, leaving a gap of about 1 inch between each cut. Set aside.
  5. In a pan, heat your butter till melted.
  6. Add the salt, chilli flakes, cheddar, corn and spinach to this and saute till well combined. Add cream and stir.
  7. Place the mushrooms on a baking tray and fill with your spinach mixture. Top with mozzarella and bake till golden brown.
