This Kerala-style Nadan Manga Achar / Kadumanga Achar / Kerala Mango Pickle Recipe is super easy to prepare with sour raw mangoes which give it an amazing flavour. This mango pickle or manga curry is an important condiment addition to the Onam sadya or Kerala wedding sadya. While different parts of Kerala and different communities prepare this simple mango pickle differently, the base recipe remains the same and you can add or subtract ingredients to your preference.

Ingredients Serving: 6

  1. 2 cups chopped raw mango
  2. 2 tbsp salt
  3. 1/2 cup garlic peeled and sliced
  4. 1/2 tsp turmeric powder
  5. 2 1/2 tsp black mustard seeds
  6. 1/2 tsp fenugreek
  7. 1/4 tsp black peppercorns
  8. 1/4 tsp hing
  9. 3 tsp red chilli powder
  10. 2 strands curry leaves
  11. 1/4 cup oil

Instructions

  1. Wash and chop the mangoes and add salt to the cut mangoes and set aside for 20 to 30 minutes.
  2. Combine 2 tsp mustard seeds , fenugreek seeds and make a coarse powder of it.
  3. Heat oil in a pan and add mustard seeds, when they splutter, add the garlic slices and when it starts to turn golden brown, add the curry leaves and coarsely ground mustard and fenugreek seeds without letting it burn.
  4. Turn off the heat and add the raw mangoes, red chilli powder and hing.
  5. Mix it lightly till all the spices are coated perfectly. Let the pickle cool down completely before pouring on jar and store it with more oil.
