ABOUT Veg Shami Kebab RECIPE

Shami Kebab is usually non vegetarian but giving the whole thing a new twist and something to add to the veg platter. Shami Kebab is usually made with meat ingredient. I have substituted meat with another protein that is soya granules.

Ingredients Serving: 4

  1. Chana dal 200gms
  2. Soya granules 100 gms
  3. Ginger 1 tbsp chopped
  4. Green chillies 2 chopped
  5. Salt to taste
  6. 2 tbsp corn flour
  7. 2 tbsp. Hung curd
  8. 1 tsp red chilli powder
  9. 1 tsp cumin seeds
  10. A pinch asafoetida
  11. 1 tsp garam masala
  12. 1/2 cup corriender leaves
  13. 6 cloves garlic chopped
  14. 1 chopped onion
  15. Edible oil

Instructions

  1. SOAK 200 GMS CHANA DAL IN WATER FOR 8 HOURS
  2. PRESSURE COOK THE DAL UNTIL SOFT
  3. DRAIN THE WATER FROM THE DAL, SET ASIDE
  4. BOIL 100 GMS SOYA GRANULES UNTIL SOFT
  5. SQUEEZE OUT THE EXCESS WATER, SET ASIDE
  6. HEAT 2 TBSP OIL, ADD 1 TSP CUMIN, 6 CHOPPED GARLIC CLOVES
  7. ADD 1/4 TSP ASAFOETIDA, 2 CHOPPED GREEN CHILLIES
  8. ADD 1 FINELY CHOPPED ONION, SAUTE UNTIL TRANSLUCENT
  9. ADD 1 TBSP GINGER PASTE
  10. ADD THE BOILED DAL & THE SOYA GRANULES
  11. ADD SALT TO TASTE, MIX WELL UNTIL THE WATER DRIES UP
  12. ADD 1 TSP GARAM MASALA, 1 TSP RED CHILLI POWDER
  13. ADD 1/2 CUP FINELY CHOPPED FRESH CORIANDER, SAUTE UNTIL DRY, TAKE OFF HEAT, ALLOW IT TO COOL
  14. SHAPE INTO SMALL KEBABS WITH OIL-GREASED PALMS
  15. FLATTEN LIKE THIS, SET ASIDE
  16. DUST WITH CORNFLOUR
  17. DIP INTO THICK CURD & REMOVE
  18. LEAVE THEM IN THE FRIDGE FOR 1 HOUR
  19. HEAT 2 TBSP OIL IN A NONSTICK PAN, SHALLOW FRY THE KEBABS ON LOW HEAT
  20. FLIP & FRY UNTIL GOLDEN BROWN & CRISP FROM BOTH SIDES
  21. THE KEBABS ARE DONE, TAKE OFF HEAT
  22. DELICIOUS VEG SHAMI KEBABS ARE READY, SERVE HOT
