ABOUT Olan - Ash Gourd and Cow Peas cooked in Coconut milk RECIPE

It is a must dish in sadya menu which is nothing but ash gourd and cow peas are cooked in coconut milk. It is lightly spiced and tastes really good.

Ingredients Serving: 3

  1. Ash gourd/white pumpkin - 1/4 kg
  2. Cow peas/ thattapayur - 1/2 cup
  3. Thin Coconut milk - 1 cup
  4. Thick Coconut milk - 1/2 cup
  5. Green chilli - 2, slitted
  6. Coconut oil - 2 tbsp
  7. Salt to taste
  8. Curry leaves - few

Instructions

  1. Soak the peas over night or up to 6 hours. Pressure cook it with a cup of water for a whistle. It should be cooked and retain its shape. Drain it and keep ready. Reserve the water for other cooking purpose.
  2. Peel the skin of the ash gourd discard the seed and cut into cubes of 1 inch.
  3. Add this to a kadai along with thin coconut milk, green chilli and little water. Cook till it is cooked (it must be cooked and should also retain its shape).
  4. Add the cooked cow peas and salt to it. Let it boil for a few seconds and thicken a bit. Lastly add the thick coconut milk.
  5. When it is about to boil, turn off the gas, drizzle the coconut oil over it along with curry leaves. Serve hot.
