ABOUT Kuzhi Paniyaram RECIPE

Ingredients Serving: 4

  1. 1 cup Urad Dal
  2. 1 large Chili, chopped finely
  3. 2 inch piece of Ginger, chopped finely
  4. 1 large Onion, chopped finely
  5. 3 cups Rice
  6. 4 tablespoons Salt
  7. 1 tablespoon crushed Peppercorn

Instructions

  1. Soak Urad dal and rice in water for 3-4 hours and grind in a mixer.
  2. Ferment the batter overnight after adding salt to it.
  3. Take a large portion of the batter and add chopped onions, ginger and peppercorns.
  4. Take a Paniyaram or Appam pan and add a little oil in each of the cups and pour the batter in the cups.
  5. Wait till you can flip the paniyaram with a spoon or/ and until it is golden on either sides.
  6. Serve with lime or mango pickle. This versatile dish goes well with red chutney as well.
