ABOUT Raabdi /Maheri RECIPE

Makai k aate ki Raabri (Maheri) is an Indian drink which can be seen in the village kitchens of Rajasthan and in U.P (mathura, Agra). You can also find Raabri served as a welcome drink in village resorts of Rajasthan.

Ingredients Serving: 2

  1. Maize / corn flour 1/2 tablspn (do not use corn starch)
  2. Roasted cumin seed powder 1/2 tspn
  3. Salt to taste
  4. Butter milk / chhaas - 1 cup
  5. Little water
  6. Green garlic stem chopped 1 tsp (optional)
  7. Ghee for tempering (to temper garlic stem - optional )

Instructions

  1. Add maize flour (makai ka atta) and buttermilk in a bowl, whisk well.
  2. Heat a heavy bottom pan , add the mixture, stir continuously and let it become thick. Add salt powder , stir till it becomes thick.
  3. Heat a ghee in a tampering pan , add gresh garlic stem, saute it for few seconds, add tempering to the raabri.
  4. You can use roasted zeera powder instead of garlic stem . Simply add zeera powder with salt.
  5. Serve piping hot if you want to have it like a soup. Or let it cool and add ice cubes and serve chilled.
