ABOUT Amriti or Imarati or Jhangri RECIPE

This Indian west Bengal Cuisine was introduced in Mughlai Kitchen. now this is popular in Rajasthan,West Bengal and South India as well.This is flower shaped uraad dal and rice batter mixed with all purpose flour deep fried and soaked in sugar syrup.

Ingredients Serving: 5

  1. 1 cup urad daal
  2. 1/3 cup Basmati Rice
  3. 200 ml water or 3/4th cup to 1 cup approximately
  4. 1/3 cup All purpose flour
  5. 2 cups of Oil (Canola or your favorite oil)
  6. 3 cups of sugar
  7. 3 cups of Water
  8. 1 teaspoon lime juice
  9. 1 teaspoon Ghee/ Clarified Butter

Instructions

  1. Wash Urad Daal and Basmati rice and soak in water for 5 hours.
  2. The rice and daal mix should be puffed up little bit after soaking . Drain the excess water and mix them to blend.
  3. Blend the batter with minimum amount of water approximately 3/4th cup or 150ml water. The mixture should look like this.
  4. Soak some Saffron strings in hot water and cover it to save the smell for 15 to 20 minutes.
  5. Add all purpose flour to the batter and mix it with some water (75 ml approximate) and check the batter.
  6. Whisk vigorously with hand mixer for 10 minutes to incorporate some air into the batter.
  7. It should fall consistently like a big wide string, not like part by part when you take some of the batter with the spatula and let it fall on its own.
  8. Add the saffron water to the batter for the color.
  9. Now to make the Sugar Syrup mix same amount of sugar and water and let it boil for 15 minutes.
  10. It should be like one thread syrup. If it is more thick the sugar will be outside of the Amriti forming crystal and not entering in the Amriti or thin syrup will make it soggy. So the sugar consistency should be perfect .
  11. Now add Ghee for flavor and Lime juice so the sugar should not form crystal.
  12. Take either ziplog bag or plastic squeezable bottle and pour the batter in it. For Ziplog bag cut the corner to make a tiny hole so the batter can fall smoothly.
  13. Make the oil hot and put the oven in medium sim. Now start making the Amirti and fry them each side approximately 1 minute.
  14. Now take each amriti and dip it in the sugar syrup both sides.
  15. Take out from the syrup and let the extra syrup drain and the Amriti is ready.
