Chicken Biryani

Ingredients to make Chicken Biryani

  • 300 gms chicken with bone
  • 200 gms Boiled rice
  • 60 ml Refined oil
  • 20 gms butter
  • 20 gms garlic
  • 5 gms Green chilli
  • 3 gms turmeric
  • 5 gms Deggi Mirch
  • salt to taste
  • 60 gms Yellow Gravy
  • 80 gms Chop masala
  • 60 gms Makhani Gravy
  • 5 gms Fresh mint
  • 5 gms Green coriander
  • 2 gms Garam masala
  • 3 gms Kitchen King
  • 15 ml saffron Water
  • 15 ml Kewra water
  • 10 gms Brown onion
  • For the Yellow Gravy (1 ltr) :
  • 700 gms onion
  • 200 gms kaju
  • 200 gms Magaj
  • 50 gms ginger
  • 50 gms garlic
  • 50 gms Green chilli
  • 60 ml Refined oil
  • 2 gms bay leaf
  • 2 gms Green cardamom
  • 2 gms cinnamon
  • 2 gms Black cardamom
  • 2 gms clove
  • 1 gms peppercorn
  • 5 gms turmeric
  • salt to taste
  • For the Chop masala ( 1 ltr ) :
  • 500 gms onion
  • 300 gms tomatoes
  • 50 gms ginger
  • 50 gms garlic
  • 100 ml Refined oil
  • 2 gms bay leaf
  • 2 gms cinnamon
  • 2 gms Black cardamom
  • 5 gms cumin
  • 5 gms Garam masala
  • 5 gms Kitchen King
  • 10 gms Deggi Mirch
  • 10 gms coriander Powder
  • salt to taste
  • For the Makhani Gravy ( 1 ltr ) :
  • 700 gms tomatoes
  • 100 gms kaju
  • 100 gms Magaj
  • 50 gms ginger
  • 50 gms garlic
  • 50 gms Green chilli
  • 60 ml Refined oil
  • 2 gms bay leaf
  • 2 gms Green cardamom
  • 2 gms Black cardamom
  • 2 gms clove
  • 10 gms Deggi Mirch
  • 10 gms sugar
  • 200 ml tomato Puree
  • salt to taste

How to make Chicken Biryani

  1. Heat oil, add chopped garlic, green chilli and add chicken to it, cook for 5 minutes.
  2. Add turmeric, deggi mirch, salt and cook for 5 more minutes. Add yellow gravy, chop masala, makhani gravy, garam masala and kitchen king masala.
  3. Cover chicken with boiled rice, green coriander, fresh mint, saffron water, kewra water and brown onions.
  4. Transfer to a bowl, serve with raita.
  5. For the Yellow Gravy: Boiled onion with kaju, magaj, ginger, garlic and green chili.
  6. Heat oil add whole masala followed by onion paste. Add turmeric and salt when the gravy is done. Keep refrigerated.
  7. For the Chop Masala:
  8. Chop onion and tomato.
  9. Heat oil add bay leaves and cumin seeds. Add chop onions, ginger garlic paste cooke for 5 minutes.
  10. Add chop tomato to it, cook for 15- 20 minutes. Add deegi mirch, coriander powder, cumin powder, salt, garam masala and kitchen king.
  11. Keep cool and refrigerated.
  12. For the Makhani Gravy:
  13. Wash tomatoes, ginger, garlic, green chili, kaju and magaj.
  14. Boil the above ingredients with whole Masala, deggi mirch, salt and sugar. Blend and strain.
  15. Heat oil add bay leaf, black cardamom, ginger garlic paste, deggi mirch and tomato puree. Add the blended tomatoes with the above.
  16. Cook for 15 minutes, cool and refrigerate.
