Delicious Hyderabadi Mutton Biriyani is a dish that no one can resist. This is an easy way to make layering the cooked mutton and rice with garnishings. The handi is sealed with dough for dum. Make and enjoy !

Ingredients Serving: 4

  1. Mutton ... 500 gms
  2. Fried onion .. 1/2 cup
  3. Ginger paste ... 2 tbsps
  4. Garlic paste .... 2 tbsps
  5. Green chillies .... 6
  6. Mint leaves .....!1 cup
  7. Coriander leaves .... 1 cup
  8. Yogurt... ...... 1/2 cup
  9. Black cardamoms .., 2
  10. Green cardamoms.. 4
  11. Bay leaves ... 4
  12. Cloves ... 8
  13. Saffron .... 1/4 tsp
  14. Milk ... 4 tbsps
  15. Kesari colour ... 1 pinch
  16. Cashews ..., 10
  17. Basmati rice ...... 2 cups or as needed
  18. Salt .... to taste
  19. Shan Biriyani masala .. 1 tbsp
  20. Garam masala powder .. 1/2 tsp
  21. Turmeric powder ... 1/4 tsp
  22. Oil ...... 1/4 cup

Instructions

  1. Grind ginger,garlic,mint,coriander leaves,green chillies, pour this mixture into a mixing bowl. Mix a tbsp of Shan Biriyani masala
  2. Add half cup yogurt
  3. Add salt, 1/4 tsp turmeric powder, 1 tsp garam masala and 1/2 cup fried onions
  4. Mix well and marinate the mutton in this marinade for few hours
  5. In a pressure cooker pan, heat 6 tbsps oil and add whole spices( bay leaves, 2 black cardamoms, 6 cloves
  6. Now add the marinated mutton
  7. Stir fry for 10 minutes
  8. Keep stirring. Now close the pressure cooker and cook for 8 - 10 whistles
  9. Open the cooker and check if the mutton is done.
  10. Now to cook the rice add green chillies, bay leaves, cinnamon, cloves and salt to the water.
  11. Boil the rice
  12. Cook until 3/4 th done. Drain and set aside.
  13. Take a handi. Pour some hot oil and spoon some rice
  14. Now spoon a layer of mutton
  15. Add some orange colored rice and chopped mint and coriander leaves .
  16. Repeat the process
  17. Spoon all the mutton in the final layer
  18. Add saffron infused milk and fried cashews. Roll out some dough and seal the handi
  19. Cover the lid and place it for dum on a tawa , on a low flame.
  20. After 15 minutes open the lid . Biriyani is ready to be served
  21. Serve with some onion raita
