ABOUT pav bhajji RECIPE

The quick version of a favourite street food of Mumbai.

Ingredients Serving: 6

  1. 500 gms chopped veggies ( a mix of potatoes, brinjal, peas, cabbage, Cauliflower, french beans, beets, tomatoes) whatever you like
  2. 2 tsp refined Oil
  3. 1 tbsp Ginger-garlic paste
  4. 1 tsp Red Chilli powder
  5. 1 tsp kashmiri Chilli powder
  6. 3 tsp pav bhaji Masala (I use Everest)
  7. Chopped Coriander to garnish
  8. Salt to taste
  9. Butter to your liking
  10. 12 pavs

Instructions

  1. In a pressure cooker, heat the oil then add the veggies, ginger, garlic, salt, chilli powder and pav bhaji masala. Cook till 2 to 3 whistles blow.
  2. While the bhaji is cooking, heat a non-stick pan, reduce the heat, on half the pav spread some butter on both the sides, then put it on the pan with the butter side down and cook till it is nicely crisp and brown.
  3. Back to the bhaji, once the veggies are done, mash them well.
  4. Serve it hot with a dollop of butter, finely chopped coriander leaves and crisp pav.
