ABOUT Lemony Spaghetti / Lemon Noodles RECIPE

These lemony noodles preparation is a bit similar to lemon rice. My son who can not eat lemon rice go gaga over these lemony noodles. Very easy and quick to make.

Ingredients Serving: 2

  1. 1.5 Cup spaghetti (noodles)
  2. 1 Medium sized onion finely chopped
  3. 1 Tsp mustard seeds
  4. 10-12 Curry leaves
  5. 1 Fistful peanuts (you can add more)
  6. 1/2 Tsp turmeric
  7. A pinch of asafoetida
  8. 2 Tsp green chili chopped
  9. 1 Tsp urad dal
  10. 1Tsp chana dal/bengal gram dal
  11. Oil to cook
  12. Salt as per taste
  13. 2 Tblsp lemon juice
  14. Grated coconut to garnish (optional)

Instructions

  1. Before any preparation just soak urad and gram dal for sometime.
  2. Boil the spaghetti (noodles) in water. Once they are cooked properly put them under running cold water for 2-3 minutes and drain all the water. Add 1 tsp oil to the boiled noodles. This is done so that they dont become sticky.
  3. Keep them aside till the masala is ready.
  4. Now heat oil in a pan and add curry leaves, mustard seeds & asafoetida.
  5. Once seeds start spluttering add chopped onion and fry until its color changes to golden brown.
  6. To this add soaked dals/lentil, peanuts and green chilies. Fry them for about 4-5 minutes until this becomes golden in color.
  7. After that add turmeric powder and salt as per taste. Finally add boiled spaghetti (noodles) and mix well.
  8. Stir it on the low flame for 2-3 min. Add lemon juice and mix well. Lemony Spaghetti (Noodles) is ready to eat now :). Serve hot and garnish it with grated coconut if you like :).
