Chicken pieces cooked with considerable amounts of garlic, this popular dish of Chinese cuisine goes well with fried rice or noodles.

Take boneless chicken & add to it cornflour (1½ tbsp), soya sauce (1 tsp), beaten egg, crushed black pepper (½ tsp), salt as per taste & mix well. Add little water if required.
Heat white oil & deep fry the chicken pieces till they turn golden, drain & keep aside.
In the same oil add the chopped garlic, chopped ginger, chopped celery & saute well. Then add garlic paste, red chilli paste & sauté further.
Add garlic-chilli sauce & the remaining soya sauce, mix well. Add about 2 cups of water, cover & cook on medium flame for a while.
Then add chopped spring onion greens, remaining crushed black pepper & salt as per taste, mix well and cook for another 2-3 minutes.
Mix rest of the cornflour with adequate water to make a smooth light paste. Add this to the cooking & keep stirring on low flame till the sauce thickens.
Then add the fried chicken pieces, mix well, cover & keep on flame for about a minute. Then add vinegar, mix lightly & switch off flame.
