ABOUT Garlic Chicken RECIPE

Chicken pieces cooked with considerable amounts of garlic, this popular dish of Chinese cuisine goes well with fried rice or noodles.

Ingredients Serving: 4

  1. Chicken (boneless) – 500gms, cut into small pieces
  2. Garlic (chopped) – 2 tbsp
  3. Ginger (chopped) – 1 tsp
  4. Garlic paste – 1 tbsp
  5. Red chilli paste - 4-5 dry red chillies soaked in vinegar & then made into paste
  6. Garlic-chilli sauce – 1½ tsp
  7. Soya sauce – 2 tsp
  8. Vinegar – 1 tsp
  9. Spring onion greens (chopped) – 1 tsp
  10. Celery (chopped) – 1½ tsp
  11. egg – 1
  12. Cornflour – 2½ tbsp
  13. Water – 2½ cups
  14. White oil – ½ cup
  15. Black pepper (crushed) – 1 tsp
  16. Salt – as per taste

Instructions

  1. Take boneless chicken & add to it cornflour (1½ tbsp), soya sauce (1 tsp), beaten egg, crushed black pepper (½ tsp), salt as per taste & mix well. Add little water if required.
  2. Heat white oil & deep fry the chicken pieces till they turn golden, drain & keep aside.
  3. In the same oil add the chopped garlic, chopped ginger, chopped celery & saute well. Then add garlic paste, red chilli paste & sauté further.
  4. Add garlic-chilli sauce & the remaining soya sauce, mix well. Add about 2 cups of water, cover & cook on medium flame for a while.
  5. Then add chopped spring onion greens, remaining crushed black pepper & salt as per taste, mix well and cook for another 2-3 minutes.
  6. Mix rest of the cornflour with adequate water to make a smooth light paste. Add this to the cooking & keep stirring on low flame till the sauce thickens.
  7. Then add the fried chicken pieces, mix well, cover & keep on flame for about a minute. Then add vinegar, mix lightly & switch off flame.
