Adai is a south Indian delicacy made of lentils and quite different from regular dosas. This mixed lentil recipe makes for a high protein breakfast and can be served with yummy coconut chutney.

Ingredients Serving: 2

  1. 1/2 cup oats
  2. 1/4 cup toovar dal
  3. 1/4 cup chana dal
  4. 1/4 cup urad dal
  5. 5-6 whole dry kashmiri red chilies, broken into pieces
  6. 1 1/4 cup water
  7. 1 pinch asafoetida
  8. 2 tbsp freshly grated coconut
  9. 1/4 cup grated carrot
  10. 1/2 cup finely chopped onions
  11. 1/4 cup finely chopped coriander
  12. 1 tbsp finely chopped curry leaves
  13. to taste salt
  14. 3 tsp oil for cooking


  1. Soak the lentils and dry red chillies in water for 2 hours.
  2. Drain and add oats and blend in a mixer to a coarse paste using 1¼ cups of water.
  3. Transfer the mixture into a deep bowl, add all the remaining ingredients and mix well.
  4. Heat a non-stick tava.
  5. Pour a ladleful of the batter on it and spread it in a circular motion.
  6. Sprinkle 1/2 tsp oil at the edges of the adai.
  7. Cook on a medium flame till the adai turns golden brown in color and crisp.
  8. Turnover and cook on another side as well.
  9. Repeat with the remaining batter to make 14 more adais.
  10. Serve immediately with coconut chutney.
