ABOUT Thai Green Curry RECIPE

A fresh, nourishing and warming curry with the goodness of Coconut milk and lean protein. This curry is rich in antioxidants due to the addition of broccoli and green beans, it also supplies your daily dose of Vitamin A. So in addition to the great taste it certainly is high up on the Nutrition quotient too!

Ingredients Serving: 4

  1. Boneless Chicken(skin removed)- 500gms
  2. Coconut Milk- 200 ml (preferably freshly squeezed from 2 coconuts or packaged)
  3. Thai green curry paste-50 gms
  4. Olive oil-1 tsp
  5. French beans- a handful top and tail
  6. broccoli -1/2 head (about 200gms)
  7. Cilantro/coriander- a handful
  8. 2 green chillies- sliced(adjust acc. to your taste)
  9. salt and black pepper to taste

Instructions

  1. Gently heat olive oil in a heavy bottom pan and add in the green curry paste(easily available at all supermarkets).Fry for a minute.
  2. Add the washed Chicken pieces and continue frying on low heat for another 5-8 minutes.
  3. Next tip in the coconut milk and stir well, add salt.
  4. Add the veggies and green chilli and cover, add 1/2 cup more water if required.
  5. Cook for another 15-20 minutes till the Chicken and veggies are both cooked through, taste and adjust seasoning.
  6. Garnish with cilantro and serve with freshly boiled rice.Enjoy!
