ABOUT Instant Hung curd pudding/kharvas RECIPE

kharvas is a taditional sweet recipe and is generally prepared with cow colostrum. This recipe is an instant version of kharvas recipe without agar agar or gelatin.

Ingredients Serving: 4

  1. 1/2 cup hung curd
  2. 1/2 cup full fat milk
  3. 1/2 cup condensed milk
  4. 1/4 cup milk powder
  5. cardamom powder a pinch
  6. Saffron soaked in milk

Instructions

  1. In a large bowl take milk and milk powder. whisk well till the milk powder combines well without any lumps.
  2. now add hung curd and condensed milk.
  3. whisk smooth making sure everything is combined well.
  4. transfer the milk mixture to a pan.
  5. sprinkle ¼ tsp cardamom powder and soaked saffron over the mixture.
  6. cover with aluminium foil or place a plate to prevent water from entering while steaming kharvas.
  7. place the pan into a steamer with enough water or place in the cooker without keeping the whistle.
  8. steam for 25 to 30 minutes. make sure to add water to the steamer if water finishes off in between.
  9. remove the aluminium foil and check if the toothpick inserted comes out clean.
  10. refrigerate the kharvas for an hour or till it sets completely.
  11. unmould the kharvas carefully, you can see excess water separating.
  12. finally, cut to desired pieces and serve instant pudding.
  13. served it chilled
