Shawarma / shawurma / shawerma, is a Levantine,Middle East meat preparation, where lamb, chicken, turkey, beef, veal, or mixed meats are grilled for a long time in a vertical spit.Shawarma is one of the world's most popular street-side food, especially in the countries of the Levant and the Arabian Peninsula.Taste wise it reminds me of Kathi Roll in Kolkata,India . A kati / Kathi roll is a street-food dish originating from Nizam Restaurant in Kolkata, India. Originally it is a skewer-roasted kebab wrapped in a paratha bread, although over years it has a lots of variants. Kati Rolls normally have coriander chutney with egg/ chicken / beef or in mixed meat form. This flavor bomb Shawarma is oven roasted healthy version of street food can be served with handmade roti, Paratha,pita, Lettuce (to make it total carb free instead of roti/paratha ) with loaded salads as cucumber, pickled Cucumber, Tomatoes (or choice of your own) and with Hummus or Greek thick yogurt sauce or your favorite hot sauce instead.

Ingredients Serving: 6

  1. Boneless skinless Chicken 2.5 pound
  2. Garlic Sauce (Main Marination)
  3. Cinnamon 1/2 teaspoon
  4. Cayenne Pepper powder 1/4 teaspoon
  5. Cumin powder 1 teaspoon
  6. Black pepper powder 1 teaspoon
  7. Garlic powder 1 teaspoon
  8. Turmeric 1 teaspoon
  9. Cardamom 1 tea spoon
  10. Paprika 1 teaspoon
  11. Ground Sumac 1 table spoon
  12. Salt 1 table spoon
  13. Olive Oil 4 Tablespoon (I used terribly low for healthy version 1.5 tablespoon)
  14. Lemon juice 1 table spoon
  15. Sliced Garlic 3 cloves
  16. Yogurt Sauce
  17. Greek yogurt 1 cup
  18. Garlic - 1 clove
  19. Ground Sumac -1 teaspoon
  20. Cayenne Pepper powder - 1/8 th teaspoon
  21. Cucumber
  22. Tomato slice
  23. Paratha / Handmade Roti / Naan/ Pita / Lettuce leaf

Instructions

  1. Mix all the ingredients other than Olive oil, Lemon juice and chopped garlic.
  2. Take Olive oil Lemon juice and chopped garlic all together and give it a proper mix.
  3. Marinate the chicken with this garlic sauce and cover it for 8 -10 hours.
  4. Place the chicken on a cooing rack on top of a baking tray lined with silver foil. Broil in the Conventional Oven for 16-18 minutes.
  5. To make the yogurt sauce beat the Greek yogurt and mix with all other ingredients.
  6. The Yogurt sauce looks like this.
  7. The chicken is cooked after 18 minutes.
  8. This is is really healthy as it drains all the Oil so the cooling rack (net) is recommended.
  9. Place a Paratha/Roti/Lettuce leaf (Choice of your own), now take chicken, cucumber,tomato slices, pickle and on top the yogurt sauce.
