ABOUT Malabar Chicken Curry RECIPE

A speciality dish which I mastered over years of cooking it the right way with the perfect blend of chicken with coconut milk.

Ingredients Serving: 4

  1. Chicken chunks 1000 gms
  2. Cloves - 6 to 8
  3. Curry leaves 10-12
  4. 4 medium onions finely chopped
  5. 2 medium tomatoes finely chopped
  6. Ginger garlic paste- freshly made 2 Tbsp
  7. Coriander powder 1 tbsp
  8. Chily powder 2 Tbsp
  9. Turmeric powder 1 tsp
  10. Garam Masala - 1 tbsp
  11. Coconut milk - 1 cup each of first and second extract
  12. Mustard Seeds - 1 tsp
  13. salt as needed
  14. Oil as per need
  15. Water as required

Instructions

  1. Heat oil in a pan.
  2. Put mustard seeds. Allow to crackle.
  3. Add cloves and curry leaves. Stir and let the juices come out in the oil.
  4. Add onions and stir well till they taking color.
  5. Add tomatoes and saute for a few mins.
  6. Once they start getting soft, add ginger and garlic paste and saute, till the raw smell subdues.
  7. Add the chicken pieces along with coriander, chilly, turmeric and Garam Masala powder. Stir well.
  8. Add thin coconut milk, preferably second extract.
  9. Add water as required and salt to taste.
  10. After about 20 mins when the chicken is cooked, add some more coconut milk. make sure this time it is the first extract.
  11. Simmer for about 10 mins.
  12. Serve hot with Indian Bread called as chapati
