Plantain Stem Kababs

Ingredients to make Plantain Stem Kababs

  • Finely chopped plantain stem - 1 cup
  • onion (finely chopped) - 2 nos
  • garlic flakes - 5 nos (optional)
  • ginger - 1/2 inch
  • chilli powder - 1/2 tsp
  • Garam masala - 1 tsp
  • coriander powder - 1 tsp
  • turmeric - a pinch
  • gram flour - 1 tbsp
  • cornflour - 1 tsp
  • coriander leaves - a handful
  • oil - for shallow frying cutlets
  • salt - to taste
  • peanuts - a handful

How to make Plantain Stem Kababs

  1. Dry roast the peanuts on a pan. Allow to cool down. Crush them coarsely.
  2. Heat oil in a pan, add the onions, ginger and garlic. Fry till onions becomes translucent.
  3. Add the chopped plantain stem along with turmeric powder, garam masala powder, coriander powder and chilli powder.
  4. Cover the pan with a lid and cook till plantain stems becomes soft.
  5. Allow the mixture to cool and give whip or two in a mixie.
  6. Transfer to a mixing bowl and add the besan, cornflour and chopped coriander leaves.
  7. Mix well and shape into a flattened disc or any other shape as you wish.
  8. Roll it gently over the crushed peanuts.
  9. Heat a non-stick tawa and drizzle the oil on it. Place the flattened discs on the tawa and cook on both sides till golden brown colour.
  10. Plantain stem kababs are ready to serve.
  11. Serve hot with tomato sauce or any other accompaniments.

My Tip:

Instead of bread crumbs i have rolled the kebabs in roasted and coarsely powdered peanuts.
