ABOUT Dahi bhalla RECIPE

The quintessential chaat of every list of chaats available. Urad dal bhallas dipped in sweetened curd, with chutney toppings.

Ingredients Serving: 4

  1. For the bhallas : Urad dal - 1 cup
  2. Salt - 1/2 tsp
  3. Cumin seeds - 1/2 tsp
  4. Refined oil
  5. Water
  6. Imli chutney :
  7. Tamarind soaked in water - 1 cup
  8. Sugar - 1/4 th cup
  9. Salt - 1 pinch
  10. Roasted jeera powder - 1 tsp
  11. Green chutney :
  12. Coriander leaves - 1cup
  13. Pudina leaves - 1 cup
  14. Tamarind - 1 tsp
  15. Garlic clove - 1
  16. Green chillies - 4
  17. Sugar - 1 tbsp
  18. Salt - 1/2 tsp
  19. Curd mixture :
  20. Curd - 1 cup
  21. Sugar - 2 tbsp
  22. Salt - 1/2 tsp
  23. Other ingredients :
  24. Chaat masala powder
  25. Roasted jeera powder
  26. Red chilly powder
  27. Sev
  28. Chopped coriander leaves

Instructions

  1. Soak the urad dal over night and grind them next day with very little water.Whisk in the salt and cumin seeds.
  2. Heat ample amount of oil, scoop small amounts of batter into it and fry the bhallas.Mix lukewarm water with little salt, strain the bhallas into it. Dip them for few seconds and drain them. This keeps the bhallas soft.
  3. For the tamarind chutney ,In a pan , heat the tamarind water and the pulp. Add the sugar and little salt. Cook till desired consistency and taste is acquired. Sprinkle roasted jeera powder.
  4. For the green chutney , grind all the above ingredients in a blender with little water. The proportion is according to personal taste.
  5. Whisk the curd with sugar, salt and water. I like it a bit sweet, so added more sugar compared to salt.
  6. Assembly : Pour the curd into a bowl, add the bhallas and Mix, add tamarind chutney, green chutney, sprinkle the powdered masalas and sev, garnish with coriander leaves.
