Ingredients Serving: 2

  1. Pumpkin 150 gms
  2. Curd 1 cup
  3. Coconut grated 2 tpsp
  4. Green chilli 1 chopped fine
  5. Green coriander 1 tbsp
  6. For tempering oil 1 tbsp
  7. Curry leaves 8
  8. Mustard seeds 1/2 tsp
  9. Jeera 1/2 tsp
  10. Hing 2 pinch
  11. Chana and urad dal 1 tsp each
  12. Red dry chillies 2
  13. Sugar 1 tsp
  14. Salt 1/4 tsp

Instructions

  1. Peel,clean and make cubes of pumpkin.Boil it in one cup water till tender.Cool and mash it.
  2. Take curd in a bowl add mashed pumpkin ,coconut and green chilli.Mix in sugar and salt.
  3. Prepare tempering by adding all ingredients in oil.Pour over the curd and pumpkin mixture.
  4. Mix well.Garnish with coriander leaves.
  5. Eat this crunchy pachdi along with your meals.
